Ethiopian cuisine characteristically consists of spicy or mild vegetable and meat dishes in the form of stews - Wots, Tibs and Fitfit - served atop the Injera, a large crepe-like flat bread. Injera is unique to Ethiopia, with its distinct taste coming from the teff flour.Ethiopians eat with their right hands, tearing pieces of Injera to pick up entrees and side dishes.  No utensils are used.

Rather than a toast to start the meal, express the Ethiopian way of welcoming those at the table through the practice of Gursha. Gursah occurs as you create a first bite for your dining companion – a sign of respect, trust and connection. At the end the favor can be returned by receiving your guests last bite from their hand.

Traditional Ethiopian cuisine employs no pork of any kind, as most Ethiopians are prohibited from eating pork by religion. Furthermore, the Ethiopian Orthodox Church prescribes a number of fasting periods, including every Wednesday and Friday, plus the entire Lenten Season.  Because of this, Ethiopian cuisine contains many vegetarian dishes made from lentils, cheak peas and collards greens.  Ethiopian cuisine also has a variety of beef, lamb, and chicken selections.
